Avocado Pesto
This is so delicious!
Use it as a dip with some crudités , or a topping for chicken or fish.
It also works well stirred into courgetti noodles, or on a salad - so versatile!!
It contains plenty of healthy fats and fibre too.
Ingredients
1 avocado, pitted and skinned
2 cups kale, leaves only
small handful of basil leaves
50ml extra virgin olive oil
1 clove garlic
juice and zest of one lemon
salt and pepper to taste
Method
Place all of the ingredients in a blender or food processor and blend until smooth and creamy
Transfer to a serving dish and serve immediately
